Discourse: A Collection of Adult Learners' Reading Response edited by Carolyn Ho is a compilation of student writings from the Kyle Family Learning and Career Center. The instructor would "let students 'talk to' literature" through writing. This is a wonderful example of learning writing skills through reading. The Shadow of Hate, Charles Guggenheim's hard-hitting 1995 film on the history of intolerance in America, is available free from Teaching Tolerance.
